Matzo Ball Soup: The Basic Passover Food for the Soul.

To celebrate Passover, EyeCandyTO wants to share with you Abe’s comfort food, Matzo Ball Soup Recipe.

Ingredients
(Serves about 8 Matzo balls)
2 tbsp Vegetable oil
2 Large eggs
1/2 cup Matzo Meal
1 tsp salt
6 cups chicken broth

Cooking Instructions:

Add eggs to a bowl

Mix eggs and oil together using a whisk.

Add matzo meal and salt to the egg mixture and blend together.

Cover and chill in the refrigerator for 20 minutes.

Remove chilled matzo ball mixture from refrigerator. Moisten hands and form balls approximately 1 inch in diameter.

Bring broth in a pot to the boiling point. Reduce heat, drop matzo balls to cook.  Cover tightly and simmer for about 30 minutes.
