It is super easy to make these savoury tarts for mom. All you need is store bought tart shells (if you don’t feel like making your own), eggs, a little bit of cream or milk, diced roasted beets, diced feta cheese, thyme, salt and pepper.
To make, bake tart shells as instructed. Let cool slightly. In a bowl mix eggs together with a little bit of cream of milk, salt and pepper using a whisk.
Place a couple of pieces of the diced beets and cheese in the centre of each cooked tart shell, sprinkle with fresh thyme, top with eggs and bake until set. They can be served hot or cold.
